Chicken wrapped in Bacon is a tried and tested combination which appears regularly on our dinner table! It’s foolproof and you can vary the recipe to suit whatever’s in your fridge.
Ingredients: (Serves 4)
4 chicken breasts
Mozzarella, cream cheese, pesto or other filling
4 slices of bacon, parma ham, proscuitto or whatever is to hand
- Preheat the oven to 200′ c and line a baking tray with non stick parchment (to save washing up!)
- Place the chicken breasts on the tray and top with your choice of cheese or pesto etc (this keeps the chicken moist)
- Top with the bacon or ham, covering as much of the chicken as possible and put in the oven for 20 mins
- Serve with your choice of salad or vegetables. This works really well with Boulangere Potatoes.
This recipe also works well with Pork steaks, Salmon, Cod, Monkfish etc
