The modern version of “Mashed Potatoes”, Crushed Potatoes are easier to make and much healthier! What a result! So simple but so good. This the perfect side dish to my lovely Roast Chicken.
Ingredients (serves 4-6)
1 kg Potatoes ( white or new, skins on or off as you prefer)
2 tbsps Olive Oil
Salt and Pepper
- Cut up the potatoes into small pieces (which will cook more quickly), add boiling water to cover and some salt and simmer for 10-15 minutes until soft.
- Drain the water, then add the Olive Oil and mash with a fork. Add salt and pepper to taste, it really is that simple!
- There are many variations which you could use, add some chopped spring onions or cooked cabbage, herbs, creme fraiche. Whatever you fancy!
