Easy Rocky Road is a great recipe that’s quick to make, I like to take this as a high energy snack when my oldest goes climbing. She definitely needs the calories! I like a small piece with my coffee but I definitely don’t need the calories, hence the “small”!
Ingredients (makes 6 large or 12 bite sized pieces)
- 2 medium-sized bars of milk chocolate
- a couple of handfuls of mini marshmallows
- 6 digestive biscuits (broken into largish chunks)
- a handful of raisins (optional)
Melt the chocolate either over a bowl of hot water or in the microwave, be careful not to overheat if using the microwave. Stir in the marshmallows and biscuits (plus raisins if using). You can add pretty much anything you like to this mix in terms of dried fruit (sour cherries or cranberries are good!)
Transfer the mix to a shallow dish lined with non stick or grease proof paper, pop in the fridge until set and cut up into pieces; smaller bits are better as this is very rich. Then enjoy!
