Gok Wan’s Easy Traditional Noodles

Plain rice noodle soup. Lunch!

Gok Cooks Chinese” is one of my favourite recipe books and my kids have loved all the recipes so far (picky middle child in particular loves noodles). I make these noodles to go with “Spicy Stir-Fried Prawns with Cashew Nuts”.

Gok Wan’s Easy Traditional Noodles

Ingredients (serves 2 as a main or 4/5 as an accompaniment)

1 litre chicken stock

4 cm piece of fresh ginger, peeled and chopped into matchsticks

200g medium noodles (dried)

2 tsps sesame oil

1 tbsp oyster sauce

2 tbsps light soy sauce

2 spring onions, finely sliced

  1. Bring the stock to boil in a pan and add the ginger, reduce to a simmer and leave for 3-5 mins.
  2. Drop the noodles into the stock and cook for about 4 mins or until soft but not mushy. Remove the noodles to a serving bowl using a pair of tongs. Drizzle with sesame oil and mix well.
  3. Add the oyster sauce and light soy sauce to the remaining stock and warm through.
  4. Ladle the hot broth over the noodles and sprinkle with the spring onion to garnish.
  5. Enjoy!
