“Gok Cooks Chinese” is one of my favourite recipe books and my kids have loved all the recipes so far (picky middle child in particular loves noodles). I make these noodles to go with “Spicy Stir-Fried Prawns with Cashew Nuts”.
Gok Wan’s Easy Traditional Noodles
Ingredients (serves 2 as a main or 4/5 as an accompaniment)
1 litre chicken stock
4 cm piece of fresh ginger, peeled and chopped into matchsticks
200g medium noodles (dried)
2 tsps sesame oil
1 tbsp oyster sauce
2 tbsps light soy sauce
2 spring onions, finely sliced
- Bring the stock to boil in a pan and add the ginger, reduce to a simmer and leave for 3-5 mins.
- Drop the noodles into the stock and cook for about 4 mins or until soft but not mushy. Remove the noodles to a serving bowl using a pair of tongs. Drizzle with sesame oil and mix well.
- Add the oyster sauce and light soy sauce to the remaining stock and warm through.
- Ladle the hot broth over the noodles and sprinkle with the spring onion to garnish.
