This spicy salad is a treat for the taste buds, it literally sings! Taken from Gok Wan’s book “Gok Cooks Chinese”, which I thoroughly recommend, it has reawakened my love of Chinese food which had been diminished by years of sad, gloopy, MSG laden offerings from restaurants and takeaways.
Ingredients: (serves 4)
1 cucumber roughly peeled and sliced with a vegetable peeler
1 clove of garlic, chopped
1/2 fresh red chilli, chopped, seeds removed (or leave for a very spicy salad!)
2 spring onions, finely sliced
3 tbsps rice vinegar
1 tsp sesame oil
1 tsp fish sauce
1 tsp light soy sauce
1 tsp caster sugar
a pinch of salt
Combine all the ingredients in a bowl (I like to add some sliced carrot for more texture) and leave to sit for 2 mins before serving. This salad really packs a zingy punch, the flavours are incredible!
