Another winning recipe from “Gok cooks Chinese”! My kids love stir fries so this was always going to be well received, I served it with “Easy Traditional Noodles“, a great combination!
This is my simplified version of Gok’s recipe, you can view the full version here. The original uses raw prawns but for speed, ease and safety (I’m never sure if I’ve removed the vein properly), I’ve used cooked, peeled prawns. Plus I replaced the vegetables with a ready made bag of stir fry from the supermarket. This makes the whole recipe super easy!
Gok Wan’s Spicy Stir-Fried Prawns with Cashew Nuts
Ingredients serves 4
2 tbsp ground nut oil
4 cm piece of ginger, peeled and chopped
4 cloves of garlic, peeled and chopped
8 spring onions, trimmed and chopped
1 red chilli, deseeded and chopped (use gloves!)
1 600 g pack of stir fry vegetables
1 400g pack of cooked, peeled, prawns
4 tsps rice wine or dry sherry
4 tsps light soy sauce
4 tsps fish sauce
a pinch of sugar
200 g cashew nuts
2 heaped tsps cornflour mixed in a little water
- Heat the oil in a wok and add the ginger, garlic and spring onion and cook for a few minutes until softened and aromatic. Add the chilli.
- Add the pack of stir fry and cook for a few minutes then add the prawns until warmed through.
- Now add the rice wine, soy sauce and fish sauce , check the saltiness and add the sugar if too salty. Add the cashews and the cornflour mix and stir together.
- Serve with a drizzle of sesame oil and the “Easy Traditional Noodles“
