Greek Salad

Recipe For Greek Salad

This has to be one of the simplest salads you can make but that doesn’t mean it’s short on flavour! Sometimes less is more….

Ingredients (serves 4)

1 green lettuce or a combination of leaves, roughly 400 g, or 1 large bag if you are buying ready prepared

2 large, ripe beef tomatoes, cut into chunks

1 cucumber, cut into chunks

A large handful of black olives, pitted

200 g feta cheese, crumbled

Dressing:

1 tbsp red wine vinegar

3 tbsps Extra Virgin Olive oil

1 tsp oregano

1 tsp mint

(some people add onion to this salad but I prefer it without as the onion can overpower the other ingredients)

Method:

Combine the vegetables and sprinkle over the feta, whisk the dressing ingredients together, pour over and serve.

This works well with a dish like Vegetarian Moussaka, as the strong flavours complement each other. Alternatively, this makes a really lovely lunch dish, served with some crusty bread to soak up the dressing.
