June is officially the start of summer and here on the North West Coast of England we are enjoying perfect summer weather. I love this time of year; it’s not too hot, the garden looks so vibrant with acid green foliage and the flowers are just starting to bloom. Time to plan some summer activities! I’ll be sharing lots of ideas over the next few weeks……

New research reported in The Telegraph has shown that a Mediterranean Diet rich in tomatoes and olive oil can be beneficial to our cardiovascular systems (heart and blood vessels). Hang on, I hear you say, that’s old news! However, what if you could get the same benefits from Tomato Ketchup?!! A new study conducted by the  University of Cambridge and the Cambridge University Hospitals NHS Trust  found that giving patients a pill containing the tomato ingredient, Lycopene, increased the width of blood vessels by up to 53%. Lycopene is ten times more potent than vitamin E and previous research has shown its potency appears to be enhanced when it is consumed pureed, in ketchup or in the presence of olive oil. I love putting tomato ketchup in my tomato based sauces: bolognese, cottage pie, curry etc and now it seems it’s super healthy!

The findings suggest that a powerful antioxidant in tomatoes may contribute to the health benefits of a Mediterranean diet
