Leek and Sweet Potato Soup

Sweet Potato Leek Soup with Parsley Oil

 

This is a really easy recipe for Leek and Sweet Potato soup, a bit of a twist on the classic combination and one which I came up with totally by accident!

Ok, so tonight I was making a fish pie for tea (bear with me!) and had just fried an onion when I found some old leeks in the fridge, “Soup” I thought! I started another pan as follows:

Ingredients:

1 onion, chopped

3 leeks, trimmed, washed and chopped

2 potatoes, 1 sweet potato, peeled and chopped (leftover from another recipe, thought it would be a nice addition!)

Vegetable stock/ Bouillon

Method:

Heat some olive oil and add the onion, followed by the 3 leeks, 2 potatoes and a sweet potato.

After they have softened add 2 pints of vegetable stock and pour it in the pan, bring it all to the boil and simmer it for 30 mins. It might need a little bit of extra seasoning, I like salt and white pepper, and it tastes divine!

Best of all this recipe contains virtually no fat (I used olive oil to fry the onion so even that’s healthy!)

If you want to be super, super healthy you could just simmer all the vegetables in stock and have a fat free soup.

I am a huge fan of soup. It’s so easy to make, you don’t even have to follow a recipe, just chuck in whatever you’ve got in the fridge or vegetable cupboard (within reason!). I find the best way is to start with an onion then chop everything and fry gently for a while, add stock and simmer. If you have one of those hand held mixers (anyone with kids knows what I mean!) then it’s very easy to whizz up.

So why is soup so good? Well it is an easy and tasty way to get more of those all important “5 a day fruit and veg” (and you can add fruit- just check out my recipe for Fennel and Pear Soup!). It will also fill you up with fewer calories, just have a small bowl before your main meal. I also find it is a great snack for my kids when they get in from school shouting “I’m starving what can I eat?”, it gets them through to tea time without being too unhealthy!

As for the fish pie, well that was really good too but I’m saving that for another time!
