Mashed Potato with Garlic

Roasted Garlic Mashed Potatoes

Don’t be afraid of the garlic in this recipe, it has a very subtle flavour and works really well with Sausages, Steaks and Moro’s Tuna Oloroso.

Serve 4

1 kg potatoes

1 garlic bulb, cloves separated and peeled

2 bay leaves

750ml milk

750ml water

3 tbsps olive oil

sea salt and black pepper

  • In a large saucepan bring to the boil the potatoes, garlic, bay leaves, milk and water, reduce to a simmer and cook for 15 minutes or until the potatoes are soft.
  • Drain the potatoes, retaining 200ml of the liquid, discard the bay leaves.
  • Mash the potatoes and garlic, adding back the cooking liquid until you have the desired consistency.
  • Stir in the olive oil and season with the salt and pepper.
