Don’t be afraid of the garlic in this recipe, it has a very subtle flavour and works really well with Sausages, Steaks and Moro’s Tuna Oloroso.
1 kg potatoes
1 garlic bulb, cloves separated and peeled
2 bay leaves
3 tbsps olive oil
sea salt and black pepper
- In a large saucepan bring to the boil the potatoes, garlic, bay leaves, milk and water, reduce to a simmer and cook for 15 minutes or until the potatoes are soft.
- Drain the potatoes, retaining 200ml of the liquid, discard the bay leaves.
- Mash the potatoes and garlic, adding back the cooking liquid until you have the desired consistency.
- Stir in the olive oil and season with the salt and pepper.
