A super simple supper dish which came about by chance (seeing a pack of ready to use scallops and chorizo in Tesco!). A stunning combination of sweet scallops and spicy chorizo.
Ingredients (serves 4):
1 onion, finely chopped
1 clove garlic, finely chopped
1 tsp chopped fresh chilli or chilli flakes
handful of green beans, chopped into small pieces
1 pack of scallops/chorizo, or cut up 8 scallops and about a 4 inch piece of chorizo
400g cooked pasta of choice
salt, pepper and lemon juice to finish
- Heat some olive oil in a frying pan and add the onion, fry for a few minutes, then add in the garlic, chilli and beans. Continue to cook for several minutes.
- Add the chorizo to the pan and stir until beginning to colour then add the scallops. Cook through and finish the sauce with salt, pepper and lemon juice to taste.
- Add the cooked pasta and stir to combine. Check the seasoning and serve with some parmesan cheese or parsley sprinkled over the top.
