Picnic Food

So Summer’s here, the kids are off school and a day out with a picnic beckons. But what about the food, will it be ham sandwiches, crisps and fairy cakes? Or do you fancy something different?

Here are some ideas for easy to make (and eat!) finger foods, perfect for picnics and parties.

  • Red Pepper and Sweetcorn Frittatas

Makes 24, Preheat oven to 200c
  • 1 small red pepper, chopped small
  • 1 small tin sweetcorn
  • 50g grated cheese
  • 2 eggs (beaten)
  • 150ml creme fraiche

These are so easy to make and delicious!  Combine all the ingredients, season and pour into muffin tins. Bake for 25 mins approximately until set, remove and cool. Perfect finger food!

  • Dips and Sticks

Smoked Mackeral Pate
Mix flaked smoked mackerel, creme fraiche (or plain yogurt), lemon juice and a good dash of horseradish (optional!).
Whizz a tin of chick peas with 2 tbs tahini (sesame paste), 4 tbs olive oil, lemon juice and chopped fresh garlic.
Pack a mixture of raw vegetable sticks, mini bread sticks and mini pitta bread, let everyone tuck in themselves.
  • Wraps

Sweet and Spicy Wraps
Wraps are the perfect finger food, use your favourite filling, wrap up tight then cut into small pieces. These are perfect for kids and you can use simple fillings such as ham and cheese (with maybe some hidden veges!)
  • All-in-one Picnic Loaf
Healthy recipe A portable dinner picnic sandwich
I love this idea! Take a round bloomer loaf or panini, cut off the top, remove most of the soft bread and add layers of ingredients. Pop the top back on with a weight (try a heavy can) and put in the fridge overnight. Take to your picnic and cut on site, the result is amazing! For the recipe click the image above.
  • Puddings in Jars
Try putting all your picnic foods (from pasta salad to strawberry shortcake) in a mason jar! It looks great and is highly functional.
If you fancy taking a nice dessert on your picnic then individual jars could be the answer, just make whatever you want (the above is layered shortcake, cream and strawberries), put into jars, pop the lid on and you have a no fuss, no mess pudding. Just don’t forget the spoons!
  • Homemade Cakes and Cookies

Homemade cakes and cookies are so much better than shop bought, they are somehow more substantial and you know exactly what’s gone in to them! Click the cookies above for more picnic ideas.
