Salad Dressings

Honey Mustard Dressing (1/2 small white onion, diced 1 T butter or oil (butter may curd if you store it for a while) 3 T grainy mustard (I use this one) 3 T honey 1 T light brown sugar 1/2 C raw apple cider vinegar 1 C extra virgin olive oil salt)

Home made Salad Dressings are so much better than shop bought ones. Mass produced dressings are made to have a long shelf life so they will often contain some sort of preservative and also thickeners. Making your own dressing means that you know exactly what the ingredients are and you can make it as healthy (or indulgent) as you want!

As a rough guide, dressings are made with an oil:vinegar ratio of 1:3, following this simple rule means you can knock up a dressing in about 30 seconds flat. Most of these recipes are in the proportion of 2:6. If you want to make more of the dressing then simply pro rata up (eg 3:9, 4:12 etc). As the dressings are providing all the flavour for your salad, try to use the best quality ingredients available.

All these dressings will keep for several days in the fridge, preferably in a screw top jar, remove from the fridge 15 minutes before serving to allow the ingredients to come back to room temperature.

Balsamic Vinaigrette

This is my favourite go to recipe when I want to make a dressing:

2 tbsps Balsamic Vinegar

6 tbsps Olive Oil

1 tsp wholegrain mustard

1 tsp honey

Whisk the ingredients together and serve.

Pesto Dessing

Make up the Balsamic Vinaigrette recipe as above and add 1 tbsp of shop bought pesto

French Dressing

A classic dressing which is never the same when shop bought:

1/4 clove garlic, chopped very small

1 tsp Dijon Mustard

2 tbsps White Wine Vinegar

6 tbsps Olive Oil

pinch of salt/pepper

Whisk the ingredients together and serve.

Italian Dressing

1/4 clove garlic, chopped small

1 shallot, chopped small

1/4 red pepper, chopped small

1 tsp Dijon Mustard

1 tsp Honey

1 tbsp White Wine Vinegar

1 tbsp Red Wine Vinegar

6 tbsps Olive Oil

1/2 tsp dried oregano

1/2 tsp dried marjoram

pinch salt/pepper

Whisk all ingredients together and serve.


Honey Mustard Dressing

4 tbsps Honey

8 tbsps Mayonnaise  (or Yogurt for a healthier dressing)

1 tbsp lemon juice

2 tbsps Dijon mustard

Whisk the ingredients together and serve, this also works well as a dressing for meats such as steak or pork.

Creamy Garlic Dressing (Caesar imitation)

3 cloves Garlic, chopped small
4 tbsps White Wine Vinegar
2 tbsps grated Parmesan cheese
5 tbsps Olive Oil
8 tbsps Greek Yogurt
Salt and Pepper to taste
Raspberry Vinaigrette
 This is a delicious dressing made with Raspberry Vinegar, if you can’t find it, try whizzing some raspberries in a blender, sieve to remove the seeds and add to the recipe with White Wine Vinegar.
 2 tbsps Raspberry vinegar
6 tbsps Olive Oil
Salt and Pepper to taste
Whisk the ingredients together and serve, why not try making Warm Chicken Liver Salad with Raspberry Vinaigrette, a delicious starter or salad dish.
Oriental Salad Dressing
This is a recipe taken from Gok Wan’s brilliant book “Gok Cooks Chinese”. The flavours in this dressing are amazing and completely addictive!

3 tbsps rice vinegar

1 tsp Sesame oil

1 tsp fish sauce

1 tsp light soy sauce

1 tsp caster sugar

a pinch of salt
