Salmon, Prawn and Dill Lasagne

Another hit from my Annabel Karmel book- 100 family meals. All 3 kids polished it off so I am very happy! A great recipe that contains loads of healthy stuff (like oily fish and vegetables) but tastes divine.

Don’t be put off by the fact that it is lasagne, I normally hate making lasagne- so fiddly! But this really is easy, it took me no longer than 30 mins to prepare and have it in the oven.

Ingredients (serves 4)

50 g butter

1 leek, finely chopped

1 tsp white vinegar

50 g plain flour

600 ml milk

2 tbsp lemon juice

100 g baby spinach

2 tbsp dill, chopped

80 g Parmesan

300g salmon fillet, skinned and cut into chunks

225 g cooked prawns

150 g broccoli, sliced into small florets and blanched

4 sheets lasagne

salt and pepper

Preheat the oven to 200 c

  • Melt the butter in a deep saucepan, add the leek and saute until soft (5-6 mins). Add the vinegar, stir in the flour and cook until blended. Add the milk, bring to the boil and stir until thickened. Then add the lemon juice, spinach, dill and 50 g Parmesan. Stir until the spinach has wilted, then season to taste with salt and pepper.
  • Put a third of the salmon, prawns and broccoli into the base of a dish (21 x 16 x 7cm). Pour over a third of the sauce. Place 2 sheets of lasagne on top. Repeat with more of the fish mixture, sauce and remaining lasagne sheets, then finish with a layer of fish and sauce. Sprinkle with the remaining Parmesan and put in the oven for 30 mins. Leave to stand for 5 mins before serving.
