Sweet Potato and Red Pepper Soup
This is such a simple recipe but tastes amazing, very rich and satisfying. Soup is a great way to up your intake of vegetables to get your all important “5 a day”!
Sweet potatoes are a nutritional superfood! A medium sized sweet potato contains 15% of the body’s daily fibre requirements, 400% of the recommended daily amount (RDA) of Vitamin A (in the form of beta-carotene), 37% RDA of Vitamin C, 16% RDA of Vitamin B-6 (plus B-1 and B-5), 15% RDA of potassium (plus iron, calcium, magnesium and manganese). They are also low GI, meaning they will keep you feeling fuller for longer without adversely affecting blood sugar levels.
- 2 red peppers
- 1lb/500g sweet potato, cubed
- 1 onion, roughly chopped
- 2 garlic cloves, chopped
- 1 litre/2 pints vegetable stock
Simmer all the vegetables in the stock for approximately 30 minutes or until soft. Season to taste then blend and serve.
It really is that simple! You can play around with the addition of herbs or other vegetables, maybe a tin of tomatoes. As it stands, this is unbelievably low calorie and a great standby snack if you are trying to lose a few pounds. For extra flavour you could fry the onions and garlic first in olive oil, then add the other vegetables before simmering in the stock.
