I love pasta and smoked salmon as a really “quick fix” meal when the kids have activities and we need to be in and out of the house quickly! Fresh pasta makes this dish very quick indeed.
Ingredients (serves 5-6)
500g pack fresh pasta
1 pack smoked salmon trimmings
200g broccoli florets (cooked)
300ml tub creme fraiche
100g grated mature cheddar
extra cheese to serve
- Cook the pasta according to the instructions.
- Meanwhile dry fry the smoked salmon trimmings for a few minutes then add the broccoli and heat through.
- Turn the heat low and add the creme fraiche and cheese, stir until melted.
- Serve the pasta with a good dollop of sauce on top and extra cheese to taste.
This recipe needs no extra seasoning as the smoked salmon and cheese are salty enough. It is also pretty healthy as the smoked salmon contains “good fats” and the calcium in the cheese prevents too much fat being absorbed (source bbc.co.uk).
