Watercress, Orange and Walnut Salad

This is a really robust winter salad which works well with meat dishes such as Beef Bourguignon. The flavours are amazing and this salad is packed full of vitamins and minerals, vital in the winter months.

Orange and watercress salad

Ingredients (serves 6)

200g watercress, washed

4 oranges, peeled and thinly sliced

200g walnut halves

Vinaigrette:

  • 2 tsp Dijon mustard
  • 2 tbsp red wine vinegar
  • 4 tbsp light olive oil
  • 2 tbsp walnut oil

Method

Assemble the salad ingredients in a bowl, whisk together the vinaigrette ingredients and toss together just before serving.
